わーい!私モニターによく当選する気がする〜。うれし〜〜!!!
ごま&ショウガ、ガーリックペッパー、醤油&バルサミコの3つ。
何作ろうかしらん。こういうの、考えるのが楽しいのよねー。
白身魚を漬け込んで、フライパンでソテーしてみようかな☆

基本の茶碗蒸し CHAWAN-MUSHI (Japanese Egg Custard)

Once I've given you Dashi recipe, I'm happy to share the other traditional Japanese recipe.
Today, It's CHAWAN-MUSHI. It's easy! and Kids will love it! 
CHAWAN-MUSHI is a cup steamed egg custard.
I would like you to enjoy flavor of Dashi! It's very mild and nice!!!

Yummy!

*Ingredients*2 servings
(Egg custard)
1 Egg
150 ml (5oz :U.S. fluid oz)  Dashi 
1/2 tsp USUKUCHI (light colored and salty) soy sauce
1/4 tsp salt

(Solid ingredients)
boiled chicken
MOCHI
KAMABOKO
Shiitake Mushroom
YURINE(Lily bulb)  and NAMAHU (only If you find at grocery)
boiled Shrimp
for 1 serving.


(Topping)
YUZU peel
MITSUBA leaf

*Directions*
Preheat the steamer on high heat.

1. Cut into small pieces of solid ingredients. Dip  chicken and shrimp into soy sauce.
2. Mix Dashi, Soy sauce and Salt in a bowl. Taste it and if you feel that just like a soup, it's perfect! Adjust taste if needed.
3. Beat Egg, Add Dashi mixture  in the egg. Strain it with a strainer.
Try not to bubble.
4. Place Solid ingredients in a small cup or mini casserole.

5. Pour the egg mixture to 3/4 of cup. and Cover the cup.

cover the cup.
6. Reduce heat to low. Place cups into the steamer. Cover and steam for about 10 minutes. or until it is firm as like a silky tofu.
Steam!
7. Garnish each cup with a YUZU peel and MITSUBA leaf.

You may also put in such as a scallop, Crab meat!
Buono! Yummy! OISHI!!

Super Soft!

I think Kids loves eggs! right?
Japanese people feed this even for baby as a baby food.
BUT, if you  wanna feed to baby, Make sure it's cooled enough. It's very very hot! Be careul with burn! and, go easy on the salt. and Not add Solid ingredients. baby could choke on it. OK?

also, You may make a CHAWAN-MUSHI with a microwave instead a steamer.
Pour hot water into a deep pyrex (or a heat resistant dish) for the water bath.
Microwave in the water bath for 2 to 5 minutes.
In the water bath.
It's depending on your microwave power and the width of cup. Please be careful not to overdo it. You may need to extend the cooking time by another 15 sec or so. Otherwise,  You'll make a big mess... Take it slow!

とても簡単な茶碗蒸し、具沢山だとちょっとうれしいですね。


ゆり根や生麩はなくても全然平気ですが、オススメの具材は、鶏肉、えび、かまぼこです。いいお味が出ます。
あと、銀杏は苦手なので入れませんでした。
お好きな具材で作って下さい!

*材料*2人前
(卵液)
卵1個
だし 150ml
薄口醤油 小さじ 1/2
塩 小さじ 1/4

(具材)
茹でた鶏肉 もも肉でも胸肉でもどちらでも結構
茹でた海老

かまぼこ
椎茸
百合根
生麩

(トッピング)
柚子の皮
三つ葉


*作り方*

準備:蒸し器を沸かしておく。

1、具材を一口大に切る。茹でた鶏肉と海老はお醤油で洗う。

2、だし、醤油、塩をあわせ、ここで味見。吸い物の濃さが目安。舐めて美味しい味ではなくて、飲んで美味しいような濃さが良い。塩が多いと卵と反応して出来上がりがしょっぱくなってしまうので塩はなるべく足さない。

3、卵を泡立たないようにかき混ぜ、2と混ぜ合わせる。卵液を漉しておく。

4、容器に具材を入れて、卵液を7分目くらいまで注ぐ。蓋をする。蒸すと膨張するので、なみなみと注がないこと。

5、蒸し器を弱火にし、約10分蒸す。

6、蒸し器から取り出し、柚子の皮、三つ葉をのせて出来上がり!



食べる時は熱々なので気をつけて下さい!
ホタテやカニやカニかまなどを入れても美味しいはず。
味を薄めにし、卵液だけを蒸して赤ちゃんの離乳食にしてもいいと思います。子供って卵好きよね〜。

蒸し器がない方は、深めの耐熱皿にお湯を張り、そこにカップを置いてレンジでチンして下さい。レンジのワット数やカップによっても時間は変わりますが、2~5分が目安です。
あまりチンし過ぎると食感が悪くなったり爆発したりするので、目を離さず加減しながらチンして下さいね。

ぷるっぷるで美味しい茶碗蒸しをどうぞ。

KFCのビスケット

こちらのKFCのビスケットのレシピを参考にして、私も焼いてみました!
ハート型
ぷっくり〜。

熱々を一つ味見してみたのだけれど、おうちで出来たてを食べるって贅沢ね〜。
明日の朝は、トースターで軽く温めてメープルシロップをたららんとかけて頂きましょ!!!

これはヨーグルトを入れて作ってあるのだけれど、明治ブルガリアヨーグルトを使ったら、ちょっと酸味が強いかな?という感じ。
次はヨーグルトの代わりにお豆腐で焼いてみようと思います。
お豆腐大好きなのです!
へへへ。楽しみ〜。

Shabu Shabu night! 今夜はしゃぶしゃぶ!

今日の夕飯はしゃぶしゃぶでした!
あぁぁあ〜美味しかったぁ。
あったまるし、たっぷり野菜も食べれて美味しいよねぇ。




アメリカでいる時は薄切りの肉を売ってるのを見かけなかったけれど、海外の人にも食べて欲しいなぁーと思って、しゃぶしゃぶのビデオまで撮ってみたの。ふふ。

Today's dinner was SHABU-SHABU!
Have you ever heard it?
It is a Japanese hot pot whose distinguishing feature is very very thin slices of beef or pork or fish (We did beef one tonight.) that are swish-swish around a few seconds in a boiling broth. Served with vegetables and tofu and noodle and mushrooms! then dipped into Sesame sauce or PONZU and eaten immediately.
ahhhhh. I'm really full!

HOUJI-CHA tea Latte ほうじ茶ティーラテ

I heard that Starbucks Japan has released HOUJI-CHA Latte!
HOUJI-CHA is Roasted tea. It's low in caffeine. and, has appetizing flavor!!!
Unfortunately, I have never tried HOUJI-CHA Latte at starbucks yet... but I just made a homemade one!
Woooo! I love it! very Japanese! Yumm!

*Ingredients* 1 serving
(HOUJI-CHA Latte)
100 ml(3.4 oz) Milk
1 and 1/2  tbsp HOUJI tea leaf

1 tbsp hot water
1 to 2 tsp granulated sugar

(Foamed milk)
1 and 2/3 Milk

*Directions*
1, In a milk pan, Mix milk, tea leaf, hot water and sugar. Simmer gently. Remove from heat just before boiled.
Let steep.

2, Microwave milk for foamed milk. and foam it.


3, Strain 1'Latte through a tea strainer.

4, Spoon foamed milk on top.

Wish you enjoy this Japanese aroma!
I also would love to give this try with soy milk!!! It sounds healthy!

ほうじ茶のティーラテなるものを、我もしてみむとてするなり。
スタバにほうじ茶のティーラテがあるという情報を聞きつけました!
ほうじ茶大好きだけど、スタバはうちから遠いんだよなーと思って作ってみたよ。

緑茶も好きだけれど、ほうじ茶も美味しいなぁ〜。

*材料*1人前
(ほうじ茶ラテ)
牛乳 100ml
ほうじ茶 大さじ1,5
お湯 大さじ1
グラニュー糖 小さじ1〜2

(フォームミルク用)
牛乳(低脂肪ではないもの) 50ml

*作り方*
1、小鍋にラテの材料を入れて弱火〜中火で温めほうじ茶を煮出す。沸騰する直前で火を止める。


2、フォームミルク用の牛乳をレンジで温め、泡立てます。

ふわふわー。
3、1の液を茶こしで漉す。

4、フォームミルクをラテの上に注ぎ入れ、ほうじ茶を少し散らして出来上がり!


簡単で美味しいのでお試しあれ〜。豆乳でもやってみよっと!

揚げ出し豆腐 AGEDASHI TOFU (Deep Fried TOFU)

If I have to choose the easiest delicious Japanese traditional dish, I might take this one, Agedashi Tofu.
Agedashi Tofu will never let you disappointed! I think.




All you need to do is go grocery to get ingredients and try this recipe right away!
Time for cooking, buddy!

*Ingredients* 1 serving
(Deep Fried Tofu)
125g (about 4 oz) silken Tofu
Oil and Potato starch or Corn starch as needed

(Soup)
70 ml (2 and 1/3 oz) Konbu and Katsuobushi Dashi stcock
2 tsp USUKUCHI soy sauce(light colored and salty soy sauce)
2 tsp MIRIN (Rice sweet cooking wine)

(Topping)
Grated DAIKON Radish to taste
Grated Ginger to taste
Chopped Chive to taste
Sliced NORI seaweed to taste
Katsuobushi to taste

*Directions*
1, Drain Tofu. Place tofu on a strainer for 15 minutes.


2, Preheat the oil to 350F.Cover tofu in starch powder.

3, Deep fry tofu for about 7-8 minutes, until they turn golden and expanded.
Can you see it's expanding? It's the ready sign!
4, In a pan,warm up all soup ingredients together.
5, Remove the tofu and drain on rack or paper towel.
Crunchy skin! Silky inside! 
6, Place tofu on bowl, pour soup on, Serve with topping!
Put Grated daikon radish and grated ginger.

smells great!!!

Better to eat while it's hot and crunchy!!!! Very Yum!
OISHI!!!! (means delicious!)
Enjoy!!!!

簡単でとっても美味しい揚げ出し豆腐。
お豆腐大好きなので、毎日のようにお豆腐を食べています。
揚げ出し豆腐は、材料もあまり必要ないのに何となく豪華な感じがしますよね。
外カリカリ中はつるるんなお豆腐!たまらん!

*材料*1人前
(豆腐)
絹ごし、またはソフト豆腐 125g
片栗粉、揚げ油、適量

(だし)
昆布と鰹節のだし 70ml
薄口醤油 小さじ2
みりん 小さじ2

(トッピング)
大根おろし、おろしショウガ、刻んだネギ、鰹節、刻み海苔、全て適量

*作り方*
1、15分程ざるなどの上で豆腐の水切りをする。
2、揚げ油を175度に。豆腐に片栗粉をまぶす。
3、7、8分程揚げる。豆腐が膨らんできて黄金色になったら揚がったサイン。
4、お鍋にだしの材料を合わせて温める。
5、揚がった豆腐の油をきる。
6、器に盛り、4のだしをかけ、トッピングをのせる。

熱々のカリカリを召し上がれ!
